Start by chilling an Old Fashioned glass by filling it with ice and letting it sit while preparing the rest of the drink.

In a separate mixing glass, muddle the sugar cube with a few drops of water (or use simple syrup if preferred).

Add the rye whiskey and Peychaud's bitters to the mixing glass with the muddled sugar and stir until well combined.

Discard the ice from the chilled Old Fashioned glass and rinse the inside of the glass with a small amount of absinthe or Herbsaint, swirling it around to coat the sides of the glass. Discard any excess liquid.

Strain the whiskey mixture from the mixing glass into the rinsed Old Fashioned glass.

Garnish by twisting a strip of lemon peel over the glass to release its oils, then rub the rim of the glass with the peel before dropping it into the drink.
